Recipe of the Month   Leave a comment

I recently mentioned to Ralph that one of the items on my list of “101 Things To Do In 1001 Days” was to try a new recipe every month.  She rolled her eyes at me and had a good laugh but she probably tries a new recipe every day.  However, I’ve never given Martha Stewart any worries as far as competition goes and I’m not about to start now.

When we were in Mexico a few weeks ago, we had Azteca Soup at a couple of different places.  A quick search on Google uncovered several options but this recipe seemed the most like what we remembered except I added about 1/3 cup of chopped fresh cilantro.  Burl deemed it as good or better than what we had in Tlaquepaque and suggested that if I added some diced chicken, it would make a complete meal.

To go with the soup I made fish tacos (another first for me – double credit for recipes in March!) but how tough is it to bake some fish, wrap a tortilla around it and garnish with lettuce, tomatoes, cheese, salsa and sour cream!  Naturally no Mexican meal would be complete without strawberry margaritas.

We’ve had a lazy afternoon and evening at home since the yukky weather forecast didn’t lend itself to venturing out without a reason.   But we’ll have warmer weather moving in over the next couple of days and I’ll be ready to get out in the yard and clear away the winter debris.  Burl has already planted lettuce in the garden.

If the weather is nasty tomorrow I think I’ll start peeling wallpaper off the bathroom walls – that will spur my handyman into action for the bathroom remodel!
