We awoke to snow flakes today – the kind that look pretty and probably won’t stick so I just figured the temp would warm to the upper 40’s and I could ignore the fact that winter will in fact rear its ugly head this year. I was wrong. Despite a few hints of blue in the sky earlier in the day, the clouds have increased steadily, the temp has dropped and the winds have picked up – and now the damned snow is sticking! The ground isn’t totally covered but the snow is starting to win the battle. I. Hate. Winter.
It was a perfect day to stay by the fire and read – so of course I did other stuff knowing that I can do that any winter day now that I don’t have the pesky day job taking up my valuable time. After church we ran a few errands and had lunch – then I headed to the gym where I did my reading on the Step Climber. And more importantly, I bought a racquetball racquet and balls so I can practice tomorrow before my game with Ann on Tuesday.
Tammy and Steve called earlier and wanted the recipe for Burl’s chili which they swear is the best they’ve ever eaten. We gave them the recipe – they invited us to dinner – such a deal. Burl is now making corn bread to take and I’m watching him – I love it when a man wants to take over in the kitchen. I’m happy to step aside.
Here’s the recipe for Burl’s Chili:
- 2# ground round
- 2# ground turkey
- 2 onions – sliced and diced
- 2 cans each of Rotel, red beans, pinto beans, chili beans and black beans (including all the juice)
Brown the meat – add the onion (cooked separately) and all the beans. Simmer for several hours – then add a scoop of sugar and some balsamic vinegar – don’t ask how much – you just have to taste it and see how you like it.
And if you make it, be sure to call us and we’ll come check it out for you and bring the corn bread!
I hope we can do Burl’s chili recipe some justice. The info you gave us was a bit lacking so we only have a total of 3# of meat rather than 4. Burl can give us some pointers when you guys get here!
As for winter…well I love it. No, I don’t like to be cold but at least it felt like Christmas today. Take heart as this isn’t going to stick around. By Tuesday the highs will be in the 50s and we’ll have sunshine soon.
