Phoenix is alive with Super Bowl enthusiasm this week and rightfully so. Annie and I headed out this afternoon to hit one of the malls and our route took us past the Univ. of Phoenix stadium where the big game will be played on Sunday. The parking lot is packed with tents for the NFL Experience which starts tomorrow ($20 a person and they expect >100,000 to go through it in the next 4 days – no thanks!) and we’re wondering where in the world the fans will park – I think even BFE is full!. They have waiting 12 years for the SB to make a reappearance and are going all out to insure an economic infusion for the entire valley area. Looks like our flight out on Saturday is just in the nick of time!
We’ve had another fun day – I went to breakfast with Burl even though I’d had Mike’s healthy alternative at home – figured he needed someone to read the paper and drink coffee with him! Came home and went for another long walk, rode my bike (I keep my old Trek out here for when I visit) and then Annie and I got away for a while this afternoon. Chef Mike outdid himself with yummy chicken enchiladas and a nearly fat-free creme brulee that had all of us licking our ramekins. He and I plan to try another version getting rid of the egg yolks and sugar and seeing if we can preserve most of the flavor while cutting caolories and taking out all the fat.
Tomorrow we head off to meet friends who used to live in Springfield – then Annie tells me she has a special treat in store for me. I love surprises!
Make sure you get Mike’s recipes for us! Everything sounds really delicious. I’ve been craving Mexican food lately, but haven’t taken the time to make it. Maybe this weekend.
Tonight we’re having ham and beans, not the most healthy thing, but we do cut out the ham fat and use dried beans. I’ve been revisiting the ol’ crock pot.
